refrigerator - PICKLED GINGER
1/2 pound (225g) fresh ginger peeled 1 cup (240ml) unseasoned rice wine vinegar 1/2 cup (120ml) cider vinegar 1/2 cup (120ml) sugar 2 tablespoons (30ml ) salt boiling water Peel the ginger and slice paper thin. Place in a bowl and cover with boiling water. Leave for 4 minutes. Drain and cover with the heated mixture of the sugar, salt and both vinegars. Transfer to a clean jar, cool, cover and place in fridge. Use this within 4 weeks.

1 tbsp. whole black peppercorns 1 tbsp. whole allspice berries 4 bay leaves, broken into bits 3 dried hot chili peppers, broken into bits 2" piece of cinnamon, broken into bits 1 tbsp. whole cloves 1/4 c. celery seeds 1/4 c. yellow mustard seeds 1 tbsp. dried celery flakes 1 tsp. dried basil 1 tsp. dried oregano 1 tsp. dried marjoram 1 tbsp. caraway seeds
Mix all ingredients together. Store in container with tight fitting cover. Makes about 1 cup.
