From Nancys News Letters March 12th, 2003 For Southern Belle Betty: Cheese Grits 2 cups water 1/2 cup quick grits, uncooked (Quaker's or whatever kind you have locally) 4 ounces processed cheese (Velveeta or your favorite cheese) cubed Paprika garlic to taste (optional) Could also add finely chopped, seeded hot peppers (heat of your choice) Bring water to boil; stir in grits slowly, reduce heat and simmer until thick (3 or 4 minutes). Add cheese and garlic; cook until melted (about 3 minutes). Add peppers at this time also if you are going to use them. Remove from heat and sprinkle with paprika. Serves about 4 My Texas friend got me to try cheese grits and I found out I really like them. The recipe she gave me is for baked grits. These are faster. Trish
