¼ cup butter or bacon fat 2 TBS minced onion 2 TBS minced green pepper 3 TBS flour ½ cup evaporated milk ½ cup water ½ tsp salt 1 tsp pepper 1 ½ cup grated extra sharp cheddar cheese ½ cup chopped parsley 3 cups cooked long grain white rice 4 slices, dense whole grain bread, crumbed Butter for topping paprika
Heat oven to 375*F. Coat a 2 QT flat baking dish with cooking spray. Saute onion and green pepper in butter for 5 minutes. Add flour, cook 5 minutes. slowly add milk and water, whisking. Add salt, pepper, cheese, parsley. Whisk to melt cheese. Stir in 1 cup cooked rice. Pour remaining rice into casserole. Top with rice/sauce mixture. Sprinkle with bread crumbs. Dot with butter. Dust with paprika. Bake 25 minutes until lightly browned and bubbly.
