For 4 Servings:
1-1/2 lbs. potatoes, peeled and thickly sliced 1/2 onion, chopped 1/4 lb. Swiss cheese, grated 1/2 lb. Provolone cheese, grated 4 eggs 2 cups milk 1/4 cup all purpose flour 1/8 tsp. thyme 1/8 tsp. nutmeg 2 Tbs. grated Parmesan cheese 3 Tbs. plain breadcrumbs Preheat oven to 375°F. Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until tender. Layer potatoes in the bottom of a buttered casserole dish, overlapping slices slightly. Season with salt and pepper to taste. Sprinkle with one third of the onion and one third of the grated cheeses. Repeat, layering potatoes, seasonings and cheese until all potatoes are used. Combine eggs, milk, flour, salt and pepper to taste, thyme and nutmeg in a bowl. Beat until mixed thoroughly. Pour over potato and cheese mixture. Potatoes should be covered. Sprinkle with Parmesan cheese and breadcrumbs. Bake 40-45 minutes or until browned and bubbly.
