This is a family favorite. We usually have this for brunch on Easter Sunday.
Crab Quiche - Makes approx. 6 servings 9-inch One-Pie Crust 1 Cup Chopped Crabmeat 1 Cup Shredded Swiss Cheese 1/3 Cup Finely Chopped Onion 4 Eggs 2 Cups Whipping Cream 1 Teaspoon Salt 1/4 Teaspoon Pepper 1/8 Teaspoon Ground Red Pepper Sprinkle with Old Bay Seasoning if available in your area
Heat oven to 425. Sprinkle crabmeat, cheese and onion in pastry lined pie plate. Beat eggs slightly; beat in remaining ingredients. Pour into pie plate. Bake uncovered 15 minutes. Reduce oven temperature to 300. Bake until knife inserted in center comes out clean, about 30 minutes. Let stand 10 minutes before cutting. Lisa Anders-Union Bridge, MD
