Potato Salad
6 lbs. potatoes (approx. 18) 10 - 12 hard-cooked eggs, chopped 1 lb. bacon, cooked and cut into small pieces 8 oz. shredded cheddar cheese Mayonnaise Salt and Pepper to taste
Scrub potatoes and place in a pot. Cover with water and and heat to boiling; reduce heat. Cover with lid and cook for approximately 30 minutes or until tender (but not mushy). Be careful to not overcook! Remove potatoes from water and allow to cool. Remove potatoe skins and cut into cubes. To the cubed potatoes, add the eggs, bacon, shredded cheese, and some mayonnaise. Stir together and add more mayonnaise as you desire. Add salt and pepper to taste.
