El Supreme Macaroni Salad
2/3 cup sour cream 1/3 cup mayonnaise 2 tablespoons fresh parsley, minced finely 2 tablespoons sweet pickle relish 1 tablespoon grainy mustard 1/4 teaspoon pepper 4 cups cooked elbow macaroni 1 cup finely minced scallions (green onions) 1/4 cup chopped olives 1 cup frozen green peas, thawed 3/4 cup finely diced sharp Cheddar cheese 1/2 cup finely diced carrots 1/2 cup finely diced sweet green pepper 1/2 cup finely diced celery 1/2 cup diced ham or cooked chicken breast (optional)
Combine sour cream, mayonnaise, parsley, pickle relish, mustard and pepper in a large bowl. Stir well. Add macaroni and remaining ingredients. Toss to coat completely. Cover with plastic wrap and refrigerate at least four hours before serving. Yields 6 servings.
