Bacon Cabbage Salad
1 small cabbage - finely shredded 1/2 green pepper - chopped 1/2 small red onion - chopped 3 tablespoons mayonnaise 2 tablespoons cider vinegar 1 tablespoon sugar 1/4 teaspoon salt 4 strips cooked drained bacon - crumbled
Directions: Combine cabbage, pepper and onion in a large bowl. Whisk mayonnaise, vinegar, sugar and salt in small bowl until smooth. Pour mayonnaise mixture over cabbage, tossing to coat evenly. Cover; refrigerate 4 hours. Sprinkle bacon on top before serving. Yield: 6 servings.
