Tropical Chicken Salad
1 can (14 oz.) sweetened condensed milk 1 cup plain yogurt 1 cup fresh or frozen lemon juice 1/2 teaspoon salt 1/2 teaspoon curry powder 3 cups diced poached chicken breast meat 2 cups finely chopped celery 1 can (11 oz.) mandarin oranges -- drained 1 cup slivered almonds -- toasted
Directions; In a bowl, combine condensed milk, yogurt, lemon juice, salt and curry together and mix well. Add chicken, celery and oranges and gently fold to mix. Taste and adjust seasonings. Chill for 2 to 3 hours.
Just before serving, add toasted almonds. Makes 8 servings.
