Hot Bacon Salad
2 slices bacon 2 T sugar 2 t cornstarch 1/3 c cider vinegar or lemon juice 1/3 c water 1 t soy or Worcestershire sauce 1/4 t pepper
Cook bacon in small skillet until crisp. Drain on paper towels, reserving 1 tbsp drippings in skillet. Stir in sugar and cornstarch; add remaining dressing ingredients. Cook until mixture boils and thickens, stirring constantly. Set aside; cool slightly.
Crumble cooked bacon and stir into mixture, or simply add the crumbled bacon to your salad itself. Pour hot dressing over mild salad vegetables such as spinach, zucchini, and mushrooms. Toss to coat, and serve immediately. Enough to coat 6 (1/2 cup) servings of salad.
