Danish Potato Salad
1/4 C. vinegar 1/4 C. water 1/4 C. sugar 1/4 tsp. salt Dash of pepper 1 tsp. prepared mustard 2 hard boiled eggs 1/2 C. chopped cucumber 1 sm. onion 1/2 C. chopped green pepper 2 eggs, well beaten I C. Miracle Whip 4 C. cubed, cooked potatoes
Directions: Combine first 6 ingredients. Bring to a boil, reduce heat, gradually beat in the well beaten eggs. Cook, stirring constantly until slightly thickened (about 5 minutes). Beat in the Miracle Whip. Toss together the r remaining ingredients. Pour dressing over potato mixture and toss gently. Adjust seasoning if necessary. Makes 6 servings. Note: the dressing can be made up and frozen for later use.
