Easy and Fast Macaroni Salad
1 lb. Macaroni, cooked, rinsed, drained, and cooled!
2 hard boiled eggs, chopped
2 ribs of celery, chopped
1 carrot, chopped
*and you can throw in anything you have on hand, ie. shredded cheese, black olives, etc.)
Combine together, set aside. Dressing:
1 cup sugar
2-3 Tbsp. mustard (I don't like any macaroni salad too mustardy!)
1 cup mayonnaise
1/3 cup vinegar
Combine well and pour over macaroni. Tastes best if it sits in the refrigerator overnight.
NOTE: Many times I will make up a LARGE amount of pasta, to use in various dishes for the next few days. Saves SO MUCH TIME, and you can creatively turn a borning dish into a much more interesting one. Even using the pasta to make a FAST salad, ie. your pasta with Wishbone Italian Dressing (the greatest one of course!), and then anything you want to throw in. I will actually have a large zip lock bag of spaghetti salad made up along with another bag of plain cooked pasta ready to use in other dishes! I am SO INTO orange and yellow peppers, I should start growing my own! Just put your pasta after it is rinsed, drained and cool into zip lock baggies. Speaking of those peppers, to turn a borning sandwich into an exciting one, slice in strips the peppers and put them into a sandwich size zip lock bag with some Wishbone dressing. Marinate for a few minutes (or longer for a really INTENSE taste) and then layer them on your sandwich (Hoagie rolls work nice with this, but I put them on just plain old wheat bread too!)... Nice crunch, GREAT taste, and gets more veggies into your daily count! There are methods to my madness!
