Wild Rice-Chicken Salad Ingredients
2/3 cup mayonaise 1/3 cup milk (low fat) 2 tablespoons lemon juice 3 cups cooked cubed chicken 3 cups cooked wild rice 1/3 cup green pepper, diced fine 1/3 cup onion or chives, diced 1/8 cup water chestnuts 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 lb. green grapes, halved 1/2 cup cashews
Directions Blend mayonnaise, milk, lemon juice. Add to chicken, rice, green pepper, onion, salt and pepper. Refrigerate 2-3 hours. Just before serving add grapes and cashews. Serve with grape clusters
