Easy Beef Enchiladas
Brown about 1-2 lbs. of ground beef, drain,
Mix with: 1/2 can of mild enchilada sauce (old el paso) 2 cups of mild cheddar cheese (shredded)
Take 10 flour or corn tortillas and fill with the ixture. Place them in a glass pan greased or lined with foil. Place remaining 1/2 can of enchilada sauce and sprinkle with cheese.Bake at 450 degrees for 15 minutes.

Beef Enchiladas
1-lb ground beef 1/2 medium onion, chopped 2 c. shredded cheddar cheese 10-12 flour tortillas 1 can enchilada sauce 1 can tomato soup 1 can cream of mushroom soup
Brown ground beef and drain. In a medium bowl, combine beef, onions, and 1 c. of the cheese.
Heat a flour tortilla in the microwave for about 20-30 seconds (long enough for the tortilla to be flexible so that it doesn't split when you roll it up with the meat inside). Lay flat and put about 1/4 cup of the meat mixture on each tortilla or enough in so that it can still roll easily and doesn't have meat falling out. Tuck in the sides and roll up like a burrito. Lay seam side down in a 9X13 pan. Repeat until the meat is gone.
In a medium bowl, mix enchilada sauce, tomato soup and cream of mushroom soup. Pour over the enchiladas in the 9X13 pan.
Top with the remaining 1 cup of cheese.
Bake at 350 degrees for about 1/2 an hour.
