Classic Tabouli
Light, refreshing salad, great as an entree or a side dish
Herbs: 1/2 Package Mint 1 Package Italian Parsley
1 cup bulgur (fine or medium cracked) 2 tomatoes, diced 2 cups boiling water 1 bunch scallions or green onions, chopped
Dressing: Juice of 2 lemons 2 tbl. olive oil 1/2 tsp. salt 1/4 tsp cracked pepper 1/4 tsp. ground cumin
1. Soak the bulgur in the boiling water for 1 hour. 2. Combine the bulgur, tomatoes, scallions, chopped mint and 1/2 package chopped Italian parsley in a medium bowl. 3. In a small bowl, stir the dressing indredients and 1/2 package chopped Italian Parsley together. 4. Pour dressing over bulgur 1 hour before serving. Servings: 6
