PATTI'S SPINACH SALAD Serves 4
In a large salad bowl combine:
1 lb. fresh spinach (You can use the baby spinach in a bag - easy & delicious!) If you use a fresh bunch, use a salad spinner to clean it!! 2 hard-boiled eggs, sliced 2 large white mushrooms, sliced Real bacon pieces, or crumble 6 cooked slices Flavored croutons, optional
Secret Sauce: ¼ cup red wine vinegar ¼ cup lemon juice ½ cup vegetable oil 2 tablespoons, grated Parmesan cheese 1 clove garlic, chopped (I use the chopped coarse garlic in a jar) Splash salt Freshly ground pepper
Combine all ingredients in a cruet. Shake well. Let guests pour their own over the spinach salad, if served cold. (Keeps very well in the refrigerator.)
