Summer Vegetable Salad
1/2 cup red wine vinegar 1'3 cup vegetable oil 3 cloves garlic, minced 1/2 tsp salt 1/8 tsp pepper 1 tsp sugar 1/2 pint cherry tomatoes, halved 1 small cucumber, peeled and sliced thinly 1 small green pepper, julienned 1 small red onion, sliced into rings 1 TBS chopped fresh basil or 1 tsp dried basil
In large bowl, combien vinegar, oil, garlic, salt, pepper and sugar. Mix well. Add remaining ingredients and toss gently. cover and chill for at least one hour before serving. Serves 4 to 6
