Perfection Salad
2 TBS gelatin 2 1/2 cup cold water 1 cup boiling water 1/3 cup sugar 1 tsp salt 1/4 cup tarragon vinegar 2 1/2 TBS lemon juice 1/2 tsp prepared horseradish 3 carrots grated 1 cup thinly sliced celery 1 2-oz jar diced pimiento 2 cups finely shredded cabbage 1/2 cup green pepper, chopped 2 green onions and tops, thinly sliced
Soften gelatin in 1/2 cup cold water. Stir in boiling water, sugar and salt. Stir until dissolved. If necessary, place over low heat to dissolve. Add remaining 2 cups cold water, vinegar, lemon juice and horseradish. chill to a soft set. Fold in remaining ingredients. Turn into a 6 cup mold. Chill overnight. Unmold to serve. Serves 6.
