Pea Salad
1 - 14 oz can good quality peas, drained 1 cup cubed mild cheddar 1 cup salted peanuts 1/3 cup chopped celery 1/4 cup chopped onion 1/4 cup chopped sweet pickle pieces 1/4 cup chopped fresh parsley 2 TBS chopped green pepper 1 TBS chopped red pepper 1 hard cooked egg, chopped 4 heaped TBS creamy salad dressing 1 tsp lemon juice 1 tsp prepared mustard 1 tsp celery seed
Combine all ingredients in the order given in a large bowl. Mix lightly. chill for several hours, covered, to allow the flavours to meld.
