Baked German Potato Salad
1 cup diced bacon 1 cup chopped celery 1 cup chopped onion 3 TBS flour 1 tsp salt 1/2 tsp pepper 2/3 cup sugar 2/3 cup cider vinegar 1 1/2 cup water 1/3 cup chopped fresh parsley 2 tsp celery seed 2 QT potatoes, boiled, peeled, sliced 1/8th inch thick
Fry bacon until crisp. Remove with a slotted spoon. Reserve. Should be 1/4 cup fat in pan. Add vegetable oil to make up difference if necessary. Add celery and onion. Cook over medium heat 3 minutes. Add flour, salt and pepper. Cook for 2 minutes longer. Then add sugar, vinegar and water all at once, stirring with a whisk. Bring to a boil and cook one minute. Add the parsley, celery seed and reserved bacon. Combine and remove from heat. Heat oven to 375*F. Place potatoes in an oiled 13X8X2 pan. Pour dressing over. Mix gently so as not to break potatoes. Bake for 45 minutes until middle of casserole bubbles. Serves 10 - 12.
