8 med potatoes, scrubbed & cut into 1-inch chunks (about 3 lb) 1 T salt 1 pkg sour cream (16 oz) 1/4 c real bacon bits 4 scallions, thinly sliced 1/2 t black pepper 1 c shredded cheddar cheese
Place the potatoes in a large pot and add enough water to cover them. Add the salt and bring to a boil over high heat. Cook for 10 to 15 minutes, or until fork-tender; drain well and allow to cool slightly. In a large bowl, combine the remaining ingredients; mix well. Add the potatoes and mix until well combined. Serve warm, or cover and chill until ready to serve. Makes 6 to 8 servings.
