White Bean Salad
Makes: 6 servings
Ingredients:
1 pound dry white beans, soaked overnight 1 large onion, chopped 3 tablespoons garlic, chopped 6 cups water 2 tablespoons garlic, minced 1/4 cup red wine vinegar 1 red onion, thinly sliced 2 tablespoons lemon juice 1 tablespoon balsamic vinegar 2 teaspoon Dijon mustard 1 green pepper, sliced 1/4 cup basil, chopped 1 teaspoon sage, chopped 2 tablespoons cilantro, chopped Directions:
Drain the beans and combine with the onion, garlic, and water in a large soup pot. Bring to a boil, reduce heat, cover, and simmer for 1 hour. Add the minced garlic, cover, and cook 30-45 minutes. Drain, saving 3/4 cup of the cooking liquid. Combine 1 tablespoon red wine vinegar and 1 cup water in a bowl; add the red onion. Soak 30 minutes. Drain. Mix together the lemon juice, vinegar, mustard, and 3/4 cup cooking liquid from the beans. Toss with the beans in a salad bowl, along with the green pepper and herbs. Nutritional Information:
