Rhubarb Salad
Ingredients: 1 pkg. frozen rhubarb 2 cups pineapple juice 2 T. sugar (more if desired) 2 pkgs. raspberry or strawberry Jello 1 cup chopped nuts 1 cup chopped apples.
Method: Cook rhubarb in 1 cup pineapple juice. Cook until mushy. Add Jello and 1 cup cold pineapple juice. Chill. When it begins to set, add nuts and apples.
