French Potato Salad
Ingredients: 2 lbs. potatoes (my favorites are small red ones), cut into bite size pieces 1 red onion, chopped 1 bunch fresh coriander or parsley, washed and chopped 1-2 tblsp Dijon or your favorite mustard 2 tsp dried tarragon 2 cloves garlic, minced 4 tblsp good olive oil lots of fresh ground pepper salt to taste 2 tblsp red wine vinegar or balsamic if you want 1/2 cup scallions, minced soy or vegan mayo (or the real stuff - your choice) at least 1/2 cup
Method: Boil potatoes until tender. Mix everything else in. Taste and correct seasonings after you chill for a while. This dressing works well for pasta salad also. Add cubes of cheddar and fresh tomato as well.
