A good dressing, along with good potatoes make the salad.
My basic dressing:
2 parts Mayonnaise (only Hellmans will do)
1 part sour cream
Tabasco
Salt
Pepper
Lemon juice
Best potatoes: Yukon Golds, Red, (any waxy potatoes)
First, toss the potatoes with salt to season while still warm. Then
when the potatoes have cooled, but are still a little warm, add the
dressing. This will help the dressing absorb into the potatoes. You
can also toss a little white wine on the potatoes before adding the
dressing. Then add your favorite ingredients. Be careful when mixing -
you don't want mashed potato salad.
Some favorite ingredients: (use your imagination!)
Green and red pepper
Celery
Hard boiled eggs
Sweet pickle relish
Vidalia onion, or any mild onion
Parsley
Scallions
Grated carrots
Fresh Herbs, such as dill, basil, thyme, oregano, mint, chives
Bacon
Most potato salads are actually better the next day, after the flavors
have an opportunity to blend.
