BACON BROCCOLI SALAD
8-10 slices bacon, cooked & crumbled 2 bundles fresh broccoli (or 20 oz frozen) 1 carrot, grated 1 small red onion, sliced thin 6 Tbsp apple cider vinegar 3 Tbsp sugar 3 Tbsp oil
Cook broccoli until tender-crisp. In large bowl, mix together well drained broccoli, carrot & red onion. Combine vinegar, sugar & oil; heat until warm. Pour over vegetable mixture; mix well. Add salt & pepper to taste. Top with bacon & serve immediately.
