low calorie Shrimp Salad
Just take out a large bowl, put in about one pound of cooked shrimp. If they are the small variety, no need to chop or cut them.
Add one cup of chopped green onions, including the tops. Then add 3 cloves of garlic which has been minced, 2-Tablespoons olive oil, and mix everything together.
Place in the refrigerator overnight. The next day prepare two-cups cooked rice; using your favorite method of cooking rice. Chop up a couple nice, ripe tomatoes and one bell pepper. Add to your shrimp mixture, then refrigerate until ready to eat. This is pretty served on lettuce leaves.
