Hi all. I'm in search of the perfect chicken salad recipe that includes fruits. Any suggestions? And, on the subject, which mayonnaise do you find works/tastes best in chicken salad? Thank you!

Hi VelvetEyes, Welcome to Nancy's Kitchen Recipe Message Board. We're glad to have you join in the fun! You may find that your request will get more responses if you put ISO or Looking for in the title. It gets our attention faster when we know someone is looking for a recipe request. I don't have a recipe per se for Chicken Salad. I just cut up some cooked leftover chicken, add some chopped celery, chopped onion, chopped hard cooked egg(s). Hellmann's/Best Foods Mayonnaise for me, thank you very much!! Some salt and pepper and taste test til it's good to go. I find that the finer the celery and onion is chopped, the better the salad. Go easy on the onion. I don't add fruit, but most recipes can support the addition of drained pineapple chunks. Drained and rinsed Mandarin Orange Segments would be another good choice. Seedless, halved grapes is another popular addition. Okay, folks, how about posting your favorite Chicken Salad Recipe with Fruit for a new member to try. And while you are at it, your opinion please, about the best salad dressing/mayonnaise to use. Thanks! -Shortcake (Moderator)

Hope this helps. Chicken Salad Ingredients: 2 c chicken (cooked, cubed) 1/2 c onion, finely chopped 1/2 c crushed pineapple, drained 1/2 c apple (not peeled) cubed 3/4 c red or green grapes (seedless) halved and quartered 1/4 c shredded carrot 3/4 c real mayonnaise 1/2 c finely chopped nuts Directions: When cooking chicken for chicken salad put in a small onion, 1 rib of celery, some parsley, 1 or 2 carrots and salt. When chicken is tender, lift out and let cool. Strain broth and you have excellent chicken soup. Mix all salad ingredients. If salad appears dry add mayonnaise or some of the drained pineapple juice.
