1 lb green beans - sliced lengthwise 1/4 lb bacon 1 Spanish onion 3 tomatoes (seeded) - peeled and chopped 1/2 c olive oil 3 T vinegar 2 T lemon juice 1/2 t salt 1/4 t black pepper 1/2 c Parmesan cheese - freshly grated 2 hard-boiled egg - grated
Blanch the beans in boiling salted water for 5 minutes. Rinse under cold water. Drain, place in a large mixing bowl. Dice the bacon, saute it until crisp then drain the fat and reserve the bacon. Dice the onion and mix into the beans along with the tomatoes. Blend the oil, vinegar, lemon, salt and pepper. Pour over the salad and marinate 1 hour. Sprinkle with cheese, egg and bacon and serve. Makes 6 servings.
