1 lb cherry tomatoes - halved 1/4 c olive oil 1/4 c balsamic vinegar 1 clv garlic - very finely chopped 1 - 2 T chopped fresh basil 1/4 c grated parmesan cheese 1 sml head radicchio - torn into bite size pieces salt and black pepper - to taste
In a large bowl, combine tomatoes, oil, vinegar, garlic and basil. Stir well to coat. Mix in cheese and radicchio. Season with salt and pepper. Makes 4 servings.
Nutritional information: 167 calories, 15 g fat, 3 g protein, 6 g carbohydrates, 4 mg cholesterol, 103 mg sodium.
