Apple - Pea Salad This is actually a Diabetic / Low Fat salad but it tastes so good you'll never notice the loss in calories!!
1 cup frozen small peas, thawed and drained ¼ cup thinly sliced celery ¼ cup chopped apple, cored and peeled 1 tsp finely diced onion ½ tsp chopped fresh mint, optional 1½ T. mayonnaise 1½ T. yogurt 2 tsp grated parmesan cheese
Combine the first five ingredients in a bowl and set aside. Combine the mayonnaise, yogurt and parmesan cheese. Pour the dressing over the pea mixture, tossing gently. Cover and chill until ready to serve.
