Salmon Caesar Salad • 1 10-ounce package fresh Caesar salad mix (includes lettuce, dressing, croutons, and cheese) • 1 small yellow, red, and/or green sweet pepper, cut into matchstick-size strips • 1/4 cup sliced pitted ripe olives • 6 ounces smoked salmon, skinned, boned, and broken into chunks; or 3 to 4 ounces thinly sliced, smoked salmon (lox-style), cut into bite-size strips; or 4 ounces grilled or canned salmon, skinned, boned, and broken into chunks
In a large salad bowl combine lettuce and dressing from salad mix, sweet pepper strips, and olives; toss gently to coat. Add salmon and the croutons and cheese from mix; toss before serving. Makes 3 servings.
