Greek Salad
Thinly slice half an English cucumber.Cut 1 sweet green pepper and half an onion into thin rings. Cut 2 tomatoes into wedges.Arrange on platter.Sprinkle vegetables with 1 tbsp. each of red wine vinegar and olive oil, 1/4 tsp. pepper and pinch of salt. scatter 2 oz. feta cheese, sliced and 12 kalamata olives over top; sprinkle with 1/4 tsp. dried oregano. Makes 4 servings.
Italian Dressing
Makes 1 1/2 cups 1 cup vegetable oil 1/2 cup vinegar 2 tbsp. lemon juice 1 tsp. garlic salt 1 tsp. sugar 1/2 tsp. dry mustard 1/2 tsp. dried oregano 1/4 tsp. dried basil Freshly ground black pepper Combine all ingredients in a screw top jar. Cover and shake vigorously to blend well. Store covered in the refrigerator. Shake well before using.
