Hearty Greek Salad Prep: 15 min. 3 cups spinach leaves, rinsed, tough stems discarded and torn into pieces 1/2 lb. european salad 2 tomatoes, cut into wedges 1/2 cup cucumber, peeled and thinly sliced 1/2 cup red bell pepper, seeded and thinly sliced 1/4 lb. black olives, pitted and thinly sliced 1/4 lb. feta cheese, crumbled 2 Tbs. plus 2 tsp. olive oil 1/3 cup capers, drained and rinsed 2 tsp. white wine vinegar 1/4 cup water 2 tsp. lemon juice 1 tsp. dried dill, or 2 tsp. fresh dill, chopped 1/2 tsp. salt optional, or to taste 1 cup cheese & garlic croutons Combine first 7 ingredients in a salad bowl and toss. Combine remaining ingredients, except croutons, in a jar with a tight-fitting lid. Add pepper to taste. Shake vigorously. Pour dressing over salad just before serving and toss.
