Vegetable and Lettuce Salad Dijon Prep: 10 min. 1 lb. european or garden salad 2 carrots, grated 8 cherry tomatoes, quartered 2 tsp. lemon juice 2 Tbs. olive oil 2 Tbs. Dijon mustard 1/2 tsp. sugar 1 cup plain lowfat yogurt 1/4 tsp. salt optional, or to taste 1 cup croutons Combine first 3 ingredients in a bowl. Combine remaining ingredients, except croutons, in a bowl. Add pepper to taste. Whisk vigorously. Pour dressing over salad and toss. Serve with croutons.
