MEXICAN CHEF SALAD Serves: 4 This salad is good for lunch with hard rolls. 1 onion, chopped 4 tomatoes, chopped 1 head lettuce, chopped 1 cup - Cheddar cheese, shredded 1 cup - Thousand Island or French dressing Hot sauce, to taste 1 cup - Fritos, crushed 1 pound - ground beef 1 can - kidney beans, drained 1/4 teaspoon - salt Tortilla chips Avocado, sliced Tomato, sliced Toss together onion, tomatoes, and lettuce. Add cheese, dressing, hot sauce, and Frito chips. Brown ground beef; mi;x in kidney beans and salt. Simmer 10 minutes; drain. Stir hamburger mixture into cold salad. Garnish with tortilla chips, avocado, and tomato. Serve immediately.
