More Soulful Recipes April 15th, 2004 Publisher: Willie Crawford Editor: Joleene www.chitterlings.com From: "Dorothy Ratliff" To: posts@chitterlings.com MAIN-DISH SALMON SALAD Serves: 6 2 cups - shell macaroni, cooked 1/4 cup - French dressing 1 (7 3/4-ounce) can - salmon 1/2 cup - celery, diced 2 tablespoons - sweet pickle relish 2 hard-cooked eggs, diced 1/2 cup - green onions, chopped 3 tablespoons - fresh parsley, minced 2/3 cup - mayonnaise 1/4 teaspoon - salt 1/4 teaspoon - garlic salt 1/8 teaspoon - pepper 1 teaspoon - prepared mustard Lettuce Parsley, sprigs Tomato wedges and cucumber slices Cook macaroni in boiling salted water until tender and drain. Add French dressing while still hot and toss. Chill. Drain and flake salmon. Add flaked salmon, celery, pickle relish, eggs, green onion, parsley, mayonnaise, salt, garlic salt, pepper and mustard to macaroni. Chill to blend flavors. TO SERVE: Spoon into lettuce-lined bowl, or for individual servings, spoon into six custard cups. Chill and unmold on lettuce-lined plates. Garnish with sprigs of parsley, tomato wedges and cucumber slices.
