More Soulful Recipes April 15th, 2004 Publisher: Willie Crawford Editor: Joleene www.chitterlings.com From: "Dorothy Ratliff" To: posts@chitterlings.com CHINESE CHICKEN POTATO SALAD Serves: 6 4 medium - potatoes Salad greens 1 1/2 cups - cookedchicken, cut in strips 1 (6-ounce) package - frozen snow peas, cooked according to package directions 2 cups - bean sprouts 1 cup - celery, thinly sliced 4 mushrooms, sliced 1/4 cup - oil 3 tablespoons - white wine vinegar 1 tablespoon - soy sauce 1/2 teaspoon - fresh ginger 1 tablespoon - fresh cilantro, chopped Simmer potatoes in water to cover until tender. When cool enough to handle, peel and cut into thin sticks. Line salad bowl or wok with salad greens. Arrange potatoes, chicken, cooled peas, bean sprouts, celery and mushrooms on lettuce. Blend oil, vinegar, soy sauce, salt, ginger and cilantro. Dazzle over salad. Chill. Garnish with additional cilantro, if desired. ;D
