Rainbow Cole Slaw
1/4 head green cabbage, shredded 1/4 head red cabbage, shredded 1/2 cup yellow bell pepper, julienned 1 cup grape tomatoes, halved Fresh basil leaves, chiffonade 3 green onions, chopped 1 TB light mayonnaise 2 TB cider vinegar Salt and pepper
1. Sprinkle salt over cabbage in a bowl. Set aside for about an hour.
2. Squeeze cabbage with paper towel to remove water.
3. Add remaining vegetables.
4. In a separate bowl, whisk mayonnaise with vinegar and pour over salad.
