INGREDIENTS 1 quart green banana pulp 1-1/2 quarts chicken stock 1 small celery stalk 1/2 onion 1 carrot 1 small bay leaf 5 peppercorns Salt to taste 1/4 cup flour 1/4 cup butter 1 pint cream, or milk Cook banana pulp, stock and seasonings together for about one-half hour until the mixture thickens. Strain over the flour and butter which have been combined as for a white sauce. Cook until thickened. 3. Just before serving add the milk or cream. Heat. Serve with a slice of lemon on each plate as a garnish Yield: 10 servings
