Country Chicken Soup (Low-Fat Recipe)
Prep Time: 10 min. Cook Time: 30 min.
3 cans (14 1/2 ounces each) Swanson Chicken Broth 1/8 teaspoon poultry seasoning 1/8 teaspoon dried thyme leaves, crushed 1 medium carrot, sliced (about 1/2 cup) 1 stalk celery, sliced (about 1/2 cup) 1 small onion, finely chopped (about 1/4 cup) 1/2 cup uncooked regular long-grain rice 2 cans (5 ounces each) Swanson Premium Chunk Chicken Breast or Chunk Chicken, drained
In large saucepan mix broth, poultry seasoning, thyme, carrot, celery and onion. Over medium-high heat, heat to a boil. Stir in rice. Reduce heat to low. Cover and cook 20 minutes or until rice is done and most of liquid is absorbed.
Add chicken and heat through.
Makes 4 servings
