Cheeseburger Soup
1/2 lb ground beef 3/4 cup chopped onion 3/4 cut shredded carrots 3/4 cup diced celery 1 tsp dried basil 1 tsp dried parsley 4 Tbsp butter 3 cup chicken broth 4 cups potatoes 1/4 cup flour 8 oz processed cheese 1 1/2 cup milk 1/4 cup sour cream
Brown beef, drain, set aside. Saute onion carrots celery basil and parsley in one Tbsp butter about 10 minutes. Add potatoes and beef, bring to a boil. Simmer 10 minutes or until potatoes are tender. In a small skillet, melt remaining butter. Add flour. Cook and stir for 2 minutes. Reduce heat. Add cheese milk salt and pepper. Cook until cheese is melted. Remove from heat, stir in sour cream.
