Easy Split Pea Soup
1 lb. green split peas 4 cups of water 1 celery stalk, chopped 1/2 onion, chopped 2 teaspoons vegetable oil 1/2 lb. ham, chopped 1 potato, chopped 1 can chicken broth (14 oz.) 1 teaspoon thyme
In a large pot, bring peas and 4 cups of water to boil. Let sit for 1 hour. Drain. Blend 1/2 of the peas in a blender until smooth. Repeat with the rest of peas. (or use a potato masher to blend down.) Return to pot. In a pan, cook celery and onion in oil until soft. Add to pot with ham, potato, chicken broth, and thyme. Bring to a boil. Cover and cook on low heat for at least one hour until peas are soft. Serves about 8.
