Cheesy Ham Chowder
2 cups fully cooked, diced ham 8 ounces diced American Cheese 2 cups small pieces cauliflower 1 cup diced potato 1 cup diced carrot 1 cup frozen whole kernel corn 1/2 cup diced onion 2 cups water, reserved from cooking vegetables 2 chicken boullion cubes 1 cup milk 1/4 cup all-purpose flour 1/4 teaspoon garlic powder 1/8 teaspoon pepper
In a large kettle, place enough water to cook vegetables. Bring to a boil. Add vegetables and reduce to simmer. Simmer about 10 minutes or until vegetables are tender. Drain, reserving 2 cups liquid. Return the liquid to the pot. Add boullion and dissolve by stirring. Add spices. Bring to simmer over medium heat. Add diced cheese and melt, stirring constantly. Reduce heat to low. Add flour to cold milk and stir until lump free. Pour into cheese mixture and thicken over medium heat. When thickened, add ham and vegetables. Heat through. Garnish with a few kernels of popped popcorn (optional), a sprig of parsley and a dash of paprika in each bowl.
