Cabbage Soup
4 c. chicken or beef or vegetable stock 1 med. cabbage, cored and coarsely chopped 1 med. onion, finely chopped 2 - 3 leeks, white part only, finely chopped 1/2 tsp. ground coriander 1/2 tsp. light brown sugar 1/4 tsp. cinnamon A pinch of saffron threads salt and ground pepper to taste
Combine all ingredients in a large pot and bring to a boil over moderate heat. Simmer covered for 20 to 30 minutes, until the cabbage is tender. Serves 4 to 6.
