French Onion Soup
4 large sliced onions 2 tbsp. butter 1 tbsp. flour 6 c. beef broth 3/4 c. Gruyere cheese, grated 1/4 c. Parmesan cheese, grated 4 slices French bread
Saute the onions in butter until opaque. Stir the flour throughout the onions. Add simmering beef broth and salt and pepper to taste and simmer for 20 minutes. Place the bread slices in bottom of large deep soup bowls. Ladle the onion soup on top of the bread. Sprinkle the cheese over top of the soup. Brown and melt the cheeses under broiler.
