Lima Bean Chowder 3/8 cup. lima beans, dried 1 tbsp. Flour 1/2 cup celery slices 1 tbsp. Fat 1/2 cup carrot slices 2 cups Milk, homogenized dash Salt dash Pepper
1. Soak beans in hot water for 12-24 hours. 2. Cook soaked beans until tender. 3. Cook celery in boiling water until just tender. 4. Cook carrots in boiling water until just tender. 5. Make whitesauce of fat, flour, milk and the cooking water (small amount). 6. Combine vegetables, lima beans, and sauce, and place in a casserole. 7. Bake at 350F until hot. 8. Serve hot. 9.
