6 small-medium Peaches
1 32oz container Vanilla Yogurt
2 sprigs of fresh mint
4 cloves
Divide the yogurt into two equal portions each in a small mixing bowl
Peal and slice 4 of the peaches, placing them in one of the bowls of yogurt
Puree the contents of the bowl containing the peaches and yogurt - I use a hand puree tool for this
Hand whip the other bowl of yogurt
Alternately fill 4 parfait bowls with the two yogurt mixtures
Garnish the tops with 3 slices of the remaining peaches
Add 2 or 3 leaves of mint to the center of the garnish
Complete the garnish by placing 1 clove in the center of the mint leaves
Serve chilled
Makes 4 servings
