For 4 Servings:
4 cups mashed potatoes 1/3 cup carrot, shredded 3 ounces cream cheese, cubed 1/3 cup light pasteurized process cheese product, cubed 1-1/3 cups skim milk Combine first 4 ingredients and salt and pepper to taste in a large saucepan over medium low heat. Stir in about half the milk until desired consistency is reached. Simmer 15-20 minutes, stirring occasionally until carrot is tender, adding more milk if mixture becomes too thick.
Per serving: calories 293, fat 14.4g, 44% calories from fat, cholesterol 45mg, protein 8.2g, carbohydrates 33.1g, fiber 2.1g, sugar 7.5g, sodium 188mg, diet points 7.1.
