1 Medium onion -- chopped fine 2 Medium Potatos -- chopped 2 Medium Carrot -- finely chopped 1 Medium celery stalk -- finely chopped 1 clove Garlic -- minced 1 Tablespoon Vegetable oil 3 1/2 cups Chicken broth 1/2 cup peanut butter, chunky
In a large. saucepan, heat oil over moderate heat. Add onion and garlic; saute for 1 min. Stir in potatoes, carrots, and celery. Add broth, and bring to a boil over high heat. Reduce heat; cover and simmer until the vegetables are tender (about 15 min.) Remove the soup from the heat. Stir in peanut butter until well mixed. Using a food processor or blender, puree the soup, half at a time, until smooth. Return the soup to the saucepan. Reheat until it is hot (but not boiling). Ladle the soup into bowls and serve immediately.
This is really a special soup, for a special event, and it's not hard to make.
